Ingredients
- 2 portions of cleaned mackerels,
- salt & pepper,
- 3 mushrooms,
- 3 spring onions,
- 1 celery stick,
- 2 tbs. of breadcrumbs,
- 1 tbs. oil plus extra for brushing on
ยท half a red pepper,
Preparation
Wash and dry the mackerel after taking the main bone out. In a pan heat the oil, add the chopped onions, mushrooms, peppers, celery stick, season with salt and pepper. Cook for 5 minutes, then add the bread crumbs, cook for another minute and take off the hob. Stuff the mackerels and use a cocktail stick to hold it together. Brush with little oil and cook in a preheated oven (200C) for about 20-30 minutes. Serve with potatoes and salad or your favorite vegetables.
