Seafood Pitas

Ingredients

  • 5 ounces imitation lobster chunks
  • 3/4 medium tomato, chopped
  • 1/3 cup red onion, finely chopped
  • 1/3 cup green bell pepper, seeded and chopped
  • 1/3 cup plain lowfat yogurt
  • 1 ounce feta cheese, finely crumbled
  • 2 Tbs. plus 2 tsp. cilantro, chopped
  • 2 Tbs. plus 2 tsp. mayonnaise
  • 1 clove garlic, minced
  • 1/8 tsp. pepper
  • 4 pita breads, cut in half
  • 8 lettuce leaves

Preparation

Toss all ingredients, except pita bread and lettuce, in a bowl. Mix thoroughly. Cover and chill. Line pita bread halves with lettuce leaves and fill with seafood mixture.
