Ingredients
- 5 ounces imitation lobster chunks
- 3/4 medium tomato, chopped
- 1/3 cup red onion, finely chopped
- 1/3 cup green bell pepper, seeded and chopped
- 1/3 cup plain lowfat yogurt
- 1 ounce feta cheese, finely crumbled
- 2 Tbs. plus 2 tsp. cilantro, chopped
- 2 Tbs. plus 2 tsp. mayonnaise
- 1 clove garlic, minced
- 1/8 tsp. pepper
- 4 pita breads, cut in half
- 8 lettuce leaves
Preparation
Toss all ingredients, except pita bread and lettuce, in a bowl. Mix thoroughly. Cover and chill. Line pita bread halves with lettuce leaves and fill with seafood mixture.
