Vegetable Salad

Ingredients

  • 1 c. cauliflower, sliced in sm. Pieces
  • 1 c. broccoli, sliced in sm. Pieces
  • 1 c. celery, sliced
  • 1 cucumber, diced
  • 1 c. zucchini squash, sliced thin
  • 1 tomato, diced
  • 1/2 c. sliced black olives
  • 1/2 green pepper, sliced
  • 1 onion, sliced in rings (preferably red onion)
  • Blue cheese dressing
  • BLUE CHEESE DRESSING:

  • 1 c. lowfat yogurt
  • 1/2 c. Miracle Whip light salad dressing
  • 1 tbsp. vinegar
  • 1/2 c. crumbled blue cheese
  • 1/2 tsp. garlic salt
  • 1/2 tsp. pepper

Preparation

Combine all ingredients in large salad bowl and toss with blue cheese dressing.

Dressing:
Mix all ingredients together well. Let stand a few minutes before serving.
