Dressing:
- 3 tablespoons extra virgin olive oil
- salt and freshly ground black pepper
- 1/2 teaspoon fresh lemon juice
- 1 tablespoon balsamic vinegar
- 1/2 small head Bibb lettuce, cut into bite-sized pieces
- 1/2 small head radicchio, cut into bite-sized pieces (3 cups, loosely packed)
- 1 head endive, thinly sliced on the diagonal (3 cups, loosely packed)
Salad:

In a large bowl, combine vinegar and lemon juice. Slowly whisk in oil until dressing has slightly thickened. Season to taste with salt and pepper.
Add endive, radicchio and lettuce. Toss lightly to coat.
