Ginger-Mint Lemonade recipe

ingredients

  • Lemon slices
  • 1 lemon, plus 1 cup fresh lemon juice (from about 6 medium lemons)
  • Fresh mint sprigs
  • 1 cup water
  • 1 1/2 cups club soda or water, chilled
  • 3 tablespoons chopped fresh ginger
  • granular sugar substitute to taste
  • 3 tablespoons chopped fresh mint leaves

Using a vegetable peeler, peel 3 (3-inch-long) strips of zest from the lemon. In a 2-cup or larger microwave-proof container, combine water, allspice, ginger and zest. Microwave on high until mixture comes to a simmer, about 2 minutes. Stir in mint and refrigerate until well chilled, at least 1 hour.
Strain into a pitcher and discard the solids. Stir in lemon juice, sugar substitute and club soda. Serve over crushed ice and garnish with mint sprigs and lemon slices.
